The perfect chocolate treat if you’re feeling a little bit naughty.
- 150g Good dark chocolate (60% cocoa solids)
- 150g Double cream
- 3 Fresh, free range egg whites
- 125g Caster sugar
- Mini Eggs - crushed
Break the chocolate into pieces, and add 30ml water to loosen, and allow to melt, either in the microwave or carefully over boiling water. Separate the egg whites from the yolks.
In one bowl whip the egg whites with caster sugar, until stiff peaks form. In another bowl whip the double cream until a peak can form, fold the melted chocolate into cream until smooth, be quick as the chocolate will want to solidify.
Add one third of the egg white into the chocolate and cream, and beat with a whisk until smooth. Gently fold the remaining egg white into the chocolate mixture until it is just mixed, but still aerated, portion into bowls/pots and allow to cool and set for two hours.
Serve topped with crushed Mini Eggs.
