Avocados have never been more popular. Loaded with heart-healthy fats, full of fibre, rich in potassium and low in saturated fats, it’s not hard to see why.
And now there’s even a day dedicated to this most fabulous of fruits, Wednesday 31st July. So to celebrate this special occasion and to follow in the footsteps of our ‘six ways with strawberries’ we’ve put together eight favourite ways with an avocado . . .
Stuff them: prawns and mayonnaise are a popular and very tasty filling for an avocado, but why not try stuffing them with a salsa of feta cheese, black olives, cherry tomatoes, red onion and sweetcorn.
Mash it: take one ripe avocado and scoop out the middle, mash with a fork and spread over a slice of sourdough toast, keep it simple with a squeeze of lemon and a dash of black pepper.
Spice it up: slice your avocado squeeze some lemon and add a splash of hot sauce or sprinkle of chilli flakes. Wrap in a tortilla and enjoy a spicy snack.
Flip them: mash your avocado and mix in flour, milk, an egg and a pinch of salt. Dollop onto a hot frying pan and flip your avocado pancake.
Toss it in a salad: Grab some greens, a crunch of cucumber and a few slices of beetroot. Add your avocado and drizzle in your favourite dressing.
Pep up a pasta: blend avocado with parmesan, water and a pinch of salt and pepper. Add to gently fried bacon and garlic, stir in fresh pasta for an egg free carbonara.
Blend into a smoothie: Add chopped banana and slices of avocado to a blender and blitz with a splash of orange juice, spoonful of honey and cold almond milk
Build up a BLT: Bacon and avocado are the perfect partners and never more tasty then on a BLT. Build your traditional sandwich of bacon, lettuce and tomato then add a few slices of avo for the perfect finishing touch.
