A Bents Kitchen Favourite

This BBQ dry rub is one of our best-kept secrets. Created by Steve, Executive Head Chef at Bents Garden & Home, it's a tried-and-tested blend of bold spices for barbecue season.

Simple to make, easy to store, and perfect for bringing out rich, smoky flavour, this is a mix worth making in bulk.

It works on everything from chicken to ribs to grilled vegetables, giving that signature caramelised crust and a flavour hit in every bite.

Ingredients for BBQ Rub

  • 6 tbsp smoked paprika
  • 4 tbsp garlic powder
  • 4 tbsp onion powder
  • 6 tbsp brown sugar
  • 1 tbsp chilli powder or cayenne
  • 1 tbsp cumin powder
  • 1 tbsp caraway seeds
  • 1 tbsp mustard powder
  • 1 tbsp dried thyme
  • 1 tbsp dried oregano
  • 1 tbsp salt

Method

Follow these simple steps to mix and store your BBQ dry rub:

1. Mix it up

Add all the ingredients to a bowl. Stir with a spoon until thoroughly combined. Break up any sugar clumps with a fork or pestle and mortar.

2. Store

Pour into a clean jar or container with a lid. Keep in a cool, dry cupboard. This BBQ rub will stay fresh for several months.

Steve's Top Tip: For a smoother barbecue spice blend, pulse the mix briefly in a spice grinder. Pulsing the spices gives an even finish that adheres well to both meat and vegetables.

How to Use

Homemade BBQ Rub

Here's how to get the best results from your homemade BBQ rub.

1. Apply generously.

Pat meat or veg dry, then coat evenly with the rub.

2. Rest if you can.

Please leave it to sit for a few hours or overnight in the fridge. The flavours develop over time.

3. Cook low and slow.

Because of the brown sugar, avoid direct flames. Use indirect heat or a smoker for the best result.

Best Meats for BBQ Rubs

This rub works well on:

  • Chicken (especially wings or thighs)
  • Pork ribs and pulled pork
  • Beef brisket or short ribs
  • Lamb shoulder
  • Grilled halloumi or aubergine

You can also sprinkle it over roasted vegetables or mix it with oil to make a marinade paste.

Spice Notes

This barbecue meat rub brings a smoky base from the paprika, warmth from cumin, and sweetness from the sugar; the dried herbs and mustard powder round it out.

You can adjust the heat by adding more chilli or switching to chipotle powder for smoky spice.
